Getting a good handle on your "why" is the topic this week. Why are going to a ketogenic diet? Understanding your motivation for making this change to your way of eating is going to be critical for success. This last week was rough for me. I know my "why' and it was what I learned on when things get hard. Everyone's reasons are different. Mine is health and getting to have fun with my boys in the present. I find it interesting that I am doing this podcast topic this week because exactly a year ago I knew my "why" and I created a motivation picture. This past week I had my stumbles, but I kept going. I put the mistakes behind me and moved on. Weekly Win Kim - Participating in a 30-day health challenge. Lora - My weekly win is that I just started Keto today and I dragged all three kids to the gym and worked out for 35 minutes on a recumbent bike. It felt so good to be there. In the Kitchen with Kim Keto Connect Mug Cake - Bacon, Cheese, Cauliflower Soup Ingredients 1 head of cauliflower - chopped 32 oz. Chicken Broth ½ cup heavy whipping cream 2 garlic cloves 2 celery stalks, chopped ½ white onion, chopped 7-8 strips of bacon 1 cup mild shredded cheddar cheese In a large soup pan, fry the bacon (medium high heat) and remove once cooked. Drain out the extra bacon fat leaving only behind enough to coat the bottom for the next set of ingredients (or leave it :) This is keto and fat if fuel!) Add celery and onion. Cook 3 minutes. Add garlic and cook 1 minute. Add about 16 oz of the chicken broth. Then add in the cauliflower and cut up about 4 strips of bacon you previously cooked and add to the pot as well. Cover the pot and cook about 15 minutes until the cauliflower is tender. Watch your stock level and add more as needed during cooking. I had to add about another 8 oz during cooking. Blender time - You may need to do this in 2 batched. Move the soup mixture to the blender and blend to the consistency you like. My first batch I left very chunky. I added in the heavy whipping cream to get it to the desired texture. The second batch I made thinner and used up the remaining chicken broth. Put the items back in the soup pot and get back up to temperature. Add some salt if needed and then add in the cheese at the last minute and stir it in.
